This time around I went for the classic hot wing but you can drown them in whatever sauce or spices you like. I had no limes or any acid at all for that matter so I improvised with some old vinegar packets I had in my pantry, still good. All you will need is the following:
2lb's organic chicken wings ( Don't be cheap and buy shitty conventional ones, I'll know and so will you, also get them whole with tips on if possible )
Fresh cracked black pepper
A hot sauce of your choice ( I really like a mexican one called Valentina )
Thick, greek style yoghurt ( Organic if possible )
1 bunch fresh cilantro
1 clove garlic
1 lime ( or old vinegar packets, whatever )
Preheat your oven to 425. Toss the wings in a big bowl with enough olive oil to coat, a good pinch of salt and about 10 cracks of black pepper. Evenly place the wings on a parchment lined baking sheet with enough room between so they don't touch, use 2 baking sheets if necessary.
Bake for 20 min or until golden brown, remove from oven and flip the wings over, pop them back in for another 20 min or until the other side is crispy and golden.
In a smaller bowl put about 1 cup of the yoghurt, smash the garlic clove with the back of knife and finely chop, add to yoghurt then chop up half of the bunch of cilantro. Cut the lime in half, squeeze only half into yoghurt at first, taste, squeeze in more if you like more citrus, and stir in the chopped cilantro. Salt and fresh cracked pepper to taste.
Put the cooked wings into a another big bowl and pour as much hot sauce all over them as you like, toss, toss, toss, toss.
Eat them. Be happy.
